  • juice of 1 lemon
  • 2 tbsp parsley finely chopped
  • salt and pepper to taste

Instructions

  1. Melt butter: Melt the butter in a deep pan with a lid over medium heat until fully melted and warm.
  2. Sauté garlic and chili: Add the thinly sliced garlic and finely chopped red chili to the melted butter and cook for 30 seconds or until fragrant, stirring gently to avoid burning.
  3. Add liquids: Pour in the white wine and lemon juice, then bring the mixture to a simmer over medium heat.
  4. Cook mussels: Add the cleaned mussels to the simmering liquid, cover the pan with a lid, and cook for 5 minutes or until all the mussels have opened. Discard any mussels that do not open.
  5. Add seasoning and herbs: Remove the lid, sprinkle the chopped parsley over the cooked mussels, and season with salt and pepper to taste. Give it a gentle stir to combine.
