These Vegan Pretzel Bites are soft, chewy, and perfect for snacking. Made with simple ingredients and no eggs or dairy, they’re boiled briefly in baking soda water before baking to achieve the classic pretzel crust. Topped with melted vegan butter and coarse sea salt, these bites are delicious served warm and make a crowd-pleasing appetizer or snack.

  • 1 packet instant yeast
  • 1 1/4 cups warm water
  • 2 tablespoons light brown sugar
  • 3 1/4 cups all purpose flour, plus more as needed
  • 1 teaspoon salt

Boiling Water

  • 12 cups water
  • 1/2 cup baking soda

Topping

  • 3-4 tablespoons vegan butter, melted
  • 1 tablespoon coarse sea salt


Instructions

  1. Preheat Oven: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Mix Ingredients: In the bowl of a stand mixer, combine warm water, brown sugar, and yeast. Stir to mix. Add 3 cups flour and salt, then mix on low speed with paddle attachment until dough starts to come together. Add up to 1/4 cup more flour as needed until dough is slightly sticky but does not stick to your hands.
  3. Shape Dough: Turn dough onto a clean surface and form into a ball. Divide into four equal sections, rolling each into a long log. Cut logs into 1-inch pieces to form pretzel bites (about 11-12 bites per section).
  4. Prepare Boiling Soda Water: Bring 12 cups water to a boil in a large pot. Slowly add baking soda to the boiling water carefully, as it will bubble up. Reduce heat to maintain a gentle boil.
  5. Boil Pretzel Bites: Add about 12 pretzel bites at a time to the boiling water. Boil each batch for 30 seconds until they float to the surface. Remove with a slotted spoon and place on parchment paper or silicone mat to cool slightly.
  6. Arrange and Top: Arrange boiled pretzel bites evenly on the prepared baking sheet. Brush them with melted vegan butter and sprinkle with coarse sea salt.
  7. Bake: Bake in the preheated oven for 15 minutes until tops are browned and pretzels have a golden crust. Remove from oven.
