Tomato Topping

  • 1 cup tomatoes, pitted and diced (about 4 roma tomatoes)
  • ¼ cup red onion, diced (about ¼ red onion)
  • 2 cloves garlic, minced
  • 5 fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Balsamic Glaze

  • ½ cup balsamic vinegar

Bread and Topping

  • ½ loaf of Italian bread or French baguette, sliced into ½ inch slices
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder


Instructions

  1. Make the tomato topping: In a medium mixing bowl, combine diced tomatoes, red onion, minced garlic, chopped basil, olive oil, salt, and black pepper. Toss everything together until well mixed. Place the mixture in the refrigerator for one hour to allow flavors to meld, although you may serve it immediately if preferred.
  2. Make the balsamic glaze: Pour balsamic vinegar into a small pot and bring to a boil over medium heat. Continue to cook, reducing the vinegar by half, which takes about 5 minutes. Remove from heat and pour the glaze into a small bowl to cool. The glaze will thicken and become glossy as it cools, similar in consistency to liquid honey.
  3. Toast the bread: Preheat the oven to 350 degrees Fahrenheit. In a small bowl, mix olive oil and garlic powder. Brush the top of each bread slice with the olive oil mixture. Arrange the slices on a quarter sheet baking pan and toast in the oven for 10 minutes until they turn light golden brown and crisp.
  4. Assemble the bruschetta: Spoon the tomato topping generously onto each toasted bread slice. Drizzle balsamic glaze over the top of each serving. Serve immediately to enjoy the crisp bread and fresh flavors.
