Description

These Taco Bites are the perfect party appetizer featuring seasoned taco meat, sour cream, shredded lettuce, cheddar cheese, and cherry tomatoes on scoop chips. Easy to assemble and bursting with classic taco flavors, they’re ideal for any gathering or snack time.

Ingredients

Scale

Taco Meat Filling

  • 1 lbs taco meat (prepared using taco meat recipe)

Other Ingredients

  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes, halved
  • 50 scoop chips

Instructions

  1. Prepare the Meat: Follow your favorite taco meat recipe or use the crunch wraps recipe to cook and season 1 lb of taco meat thoroughly.
  2. Prepare the Toppings: Shred 2 cups of iceberg lettuce and ½ cup of cheddar cheese. Slice 25 mini cherry tomatoes in half for topping.
  3. Prepare Sour Cream Piping Bag: Place ½ cup of sour cream into a sandwich bag, cut a small corner to create a piping bag, and set aside for easy application later.
  4. Assemble Taco Bites: Arrange 50 scoop chips on a large platter. Add about ½ teaspoon of prepared taco meat onto each chip.
  5. Add Sour Cream: Pipe a small amount of sour cream over the taco meat on each chip using the prepared sandwich bag.
  6. Add Lettuce: Top each chip with a generous amount of shredded lettuce.
  7. Finish with Cheese and Tomato: Sprinkle shredded cheddar cheese on each and top with half a mini cherry tomato.
  8. Serve: Arrange and serve immediately for best freshness and crunch.

Notes

  • You can substitute iceberg lettuce with shredded romaine or cabbage for extra crunch.
  • Use low-fat sour cream or Greek yogurt for a lighter option.
  • For a spicier bite, add a small dollop of salsa or hot sauce on top.
  • These can be prepped ahead by cooking meat and shredding toppings but assemble just before serving to keep chips crisp.
  • For a vegetarian version, replace taco meat with seasoned cooked black beans or lentils.
