Description

A comforting slow cooker recipe featuring tender chicken breasts and Yukon gold potatoes simmered in a flavorful parmesan garlic sauce, perfect for an easy and delicious meal.

Ingredients

Scale

Main Ingredients

  • 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 2 pounds quartered Yukon gold potatoes
  • 1 tablespoon dried Italian seasoning
  • 1 (12-ounce) bottle parmesan garlic sauce
  • ½ cup chicken broth
  • 1 cup grated parmesan cheese

Instructions

  1. Prepare Slow Cooker: Spray the inside of the crockpot with non-stick cooking spray to prevent sticking and make cleanup easier.
  2. Add Potatoes: Place 2 pounds of quartered Yukon gold potatoes into the bottom of the slow cooker, creating a base layer for the chicken.
  3. Prepare and Add Chicken: Cut 2 pounds of boneless skinless chicken breasts into bite-sized pieces. Sprinkle 1 tablespoon of dried Italian seasoning over the chicken and add it on top of the potatoes.
  4. Add Sauces and Cheese: Pour 1 (12-ounce) bottle of parmesan garlic sauce over the chicken and potatoes, then add ½ cup chicken broth followed by 1 cup of grated parmesan cheese.
  5. Combine Ingredients: Stir everything gently to combine the sauce and seasonings evenly throughout the slow cooker contents.
  6. Cook: Cover with the lid and cook on LOW for 5 hours to allow flavors to meld and chicken to become tender. Alternatively, cook on HIGH for 4 hours if short on time.
  7. Garnish and Serve: Once cooked, garnish with fresh chopped parsley and additional parmesan cheese if desired. Serve warm for a hearty meal.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat individual portions in the microwave for 1-2 minutes until warmed through.
  • You can substitute Yukon gold potatoes with red potatoes or baby potatoes for variety.
  • For a creamier texture, add a splash of heavy cream or milk before cooking.
  • If parmesan garlic sauce is unavailable, use a mixture of garlic, butter, cream, and parmesan cheese as a homemade alternative.
