Horseradish Sauce

  • 4 oz. blue cheese, crumbled
  • 1/2 cup sour cream
  • 2 tablespoons horseradish

  • 2 tablespoons fresh chives, chopped


Instructions

  1. Preheat and Prepare Toasts: Preheat the oven to 400˚F and lightly drizzle olive oil on a sheet tray. Lay out the sliced baguette pieces, drizzle with additional olive oil, and season lightly with salt and pepper. Bake for 15 minutes or until golden and crisp.
  2. Cook the Steak: Heat a heavy-bottomed pan over medium-high heat with olive oil. Season the sirloin steak with salt and pepper. Sear the steak for 4 minutes on one side, then flip. Add butter, rosemary, and garlic cloves to the pan, cooking the steak until medium-rare, basting frequently with the flavored oil. Remove and let rest before slicing thinly on the bias.
  3. Make Horseradish Sauce: In a bowl, combine sour cream, horseradish, mayo, apple cider vinegar, and chopped chives. Mix well and season with salt and pepper to taste.
