- 8 oz. sirloin steak
- 1 tablespoon unsalted butter
- 1 baguette, sliced
- 2 tablespoons olive oil, plus more for drizzling

Horseradish Sauce
- 4 oz. blue cheese, crumbled
- 1/2 cup sour cream
- 2 tablespoons horseradish
- 2 tablespoons mayo
- 1 teaspoon apple cider vinegar
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat and Prepare Toasts: Preheat the oven to 400˚F and lightly drizzle olive oil on a sheet tray. Lay out the sliced baguette pieces, drizzle with additional olive oil, and season lightly with salt and pepper. Bake for 15 minutes or until golden and crisp.
- Cook the Steak: Heat a heavy-bottomed pan over medium-high heat with olive oil. Season the sirloin steak with salt and pepper. Sear the steak for 4 minutes on one side, then flip. Add butter, rosemary, and garlic cloves to the pan, cooking the steak until medium-rare, basting frequently with the flavored oil. Remove and let rest before slicing thinly on the bias.
- Make Horseradish Sauce: In a bowl, combine sour cream, horseradish, mayo, apple cider vinegar, and chopped chives. Mix well and season with salt and pepper to taste.
- Assemble Toasts: On each toasted baguette slice, sprinkle a little blue cheese, add a slice of steak, then top with a spoonful of the horseradish sauce. Garnish with extra chives if desired.
