Squash and Seasoning
- 1 delicata squash (⅔ lb.)
- 1 Tbsp olive oil
- 1/8 tsp salt
- 1/8 tsp garlic powder
- 1/8 tsp freshly cracked black pepper
Instructions
- Preheat oven: Preheat your oven to 400 degrees Fahrenheit to get it ready for roasting.
- Prepare squash: Cut the ends off the delicata squash, then slice it lengthwise. Use a spoon to scrape out the seeds thoroughly.
- Slice squash: Cut the squash into ½-inch wide slices for even cooking.
- Season: Place the squash slices on a parchment-lined baking sheet. Drizzle olive oil over them and sprinkle the salt, garlic powder, and black pepper. Toss gently to coat all pieces evenly.
- Arrange for roasting: Spread the slices out in a single, even layer on the baking sheet to ensure uniform roasting.
- Roast: Transfer the sheet to the oven and roast for 20 minutes. Carefully flip each piece over to brown the other side.
- Finish roasting: Continue roasting for an additional 15 minutes or until the squash is browned to your preference and tender.
- Season to taste: Remove from oven and taste the squash. Adjust salt and pepper as desired before serving warm.
Notes
- Cooking times may vary depending on the size and thickness of the squash slices.
- Using parchment paper makes cleanup easier and prevents sticking.
- For extra flavor, you can add a sprinkle of smoked paprika or fresh herbs before roasting.
- Delicata squash skin is edible once roasted, so no need to peel.
