Description

A simple and flavorful recipe for roasted delicata squash slices seasoned with olive oil, garlic powder, salt, and black pepper. Perfect as a warm side dish that’s easy to prepare and brings out the natural sweetness of the squash.

Ingredients

Scale

Squash and Seasoning

  • 1 delicata squash ( lb.)
  • 1 Tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp garlic powder
  • 1/8 tsp freshly cracked black pepper

Instructions

  1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit to get it ready for roasting.
  2. Prepare squash: Cut the ends off the delicata squash, then slice it lengthwise. Use a spoon to scrape out the seeds thoroughly.
  3. Slice squash: Cut the squash into ½-inch wide slices for even cooking.
  4. Season: Place the squash slices on a parchment-lined baking sheet. Drizzle olive oil over them and sprinkle the salt, garlic powder, and black pepper. Toss gently to coat all pieces evenly.
  5. Arrange for roasting: Spread the slices out in a single, even layer on the baking sheet to ensure uniform roasting.
  6. Roast: Transfer the sheet to the oven and roast for 20 minutes. Carefully flip each piece over to brown the other side.
  7. Finish roasting: Continue roasting for an additional 15 minutes or until the squash is browned to your preference and tender.
  8. Season to taste: Remove from oven and taste the squash. Adjust salt and pepper as desired before serving warm.

Notes

  • Cooking times may vary depending on the size and thickness of the squash slices.
  • Using parchment paper makes cleanup easier and prevents sticking.
  • For extra flavor, you can add a sprinkle of smoked paprika or fresh herbs before roasting.
  • Delicata squash skin is edible once roasted, so no need to peel.
