Ingredients
Scale
Jam
- 12 ounces frozen raspberries
- 2 tbsp chia seeds
- 1 cup water
- 1 tbsp arrowroot powder
Brownie Layer
- 2/3 cup cocoa powder
- 1/3 cup maple syrup
- 1/3 cup runny nut butter
- 1/2 cup oat flour
- 1/3 cup + 2 tbsp almond milk
- 1 tsp vanilla extract
Melted Chocolate Layer
- 1 cup chocolate chips (Pascha brand preferred)
- 1 tbsp coconut oil
Other
- 10 large Medjool dates
Instructions
- Make the raspberry jam: In a saucepan over medium heat, combine the frozen raspberries, chia seeds, water, and arrowroot powder. Cook and stir periodically for 12 minutes or until the mixture thickens into a jam consistency.
- Prepare the brownie layer: In a mixing bowl, whisk together cocoa powder, maple syrup, runny nut butter, oat flour, almond milk, and vanilla extract until smooth. Shape the mixture into small balls or press into silicone ice cube molds. Freeze these for 30 minutes to firm up.
- Assemble the bites: Flatten each Medjool date and press a brownie layer ball on top. Then scoop a spoonful of the prepared raspberry jam on the brownie layer.
- Set the assembled bites: Place the bites in the freezer for 1 hour to allow the layers to set properly.
- Prepare the melted chocolate coating: Melt the chocolate chips with coconut oil until smooth, either in a microwave or double boiler. Dip each bite into the melted chocolate to coat, then transfer them to the fridge for 20 minutes or until the chocolate hardens.
- Storage: Store the finished Raspberry Brownie Date Bites in an airtight container in the refrigerator to keep them fresh.
Notes
- Use silicone molds to create uniform brownie shapes and ease assembly.
- Maple syrup can be substituted with agave nectar or honey if preferred.
- For a nut-free version, replace nut butter with sunflower seed butter and use a nut-free milk alternative.
- Make sure to fully chill the bites before dipping in chocolate to ensure the chocolate sets properly.
- Store in the fridge up to 1 week or freeze for longer storage.
