Description

A deliciously tangy and melty Pickle Grilled Cheese Sandwich featuring sharp cheddar, crisp dill pickles, and a hint of dill weed, perfectly pan-fried to golden brown perfection.

Ingredients

Scale

Main Ingredients

  • 2 to 3 tablespoons butter
  • 4 slices sandwich bread (like sourdough)
  • 4 ounces shredded cheddar cheese (about 1 cup), divided
  • 2 kosher dill pickles, thinly sliced and patted dry
  • Pinch dried dill (dill weed)
  • 1 tablespoon hot sauce, optional (such as Sriracha)

Instructions

  1. Prepare Bread: Spread the butter evenly on both sides of the 4 slices of sandwich bread. Adjust butter quantity according to bread size and desired richness.
  2. Assemble Sandwich Layers: On two slices of bread, evenly distribute half of the shredded cheddar cheese (2 ounces or ½ cup), then sprinkle a pinch of dried dill over the cheese. Layer the thinly sliced, dry-patted kosher dill pickles on top.
  3. Add Sauce and Cheese: Drizzle hot sauce over the pickles if using, then top with the remaining cheddar cheese (2 ounces or ½ cup).
  4. Close Sandwiches: Place the remaining slices of bread on top to form two complete sandwiches.
  5. Heat Pan and Cook: Warm a 10-inch or 12-inch cast-iron skillet over medium-low to medium heat. Place the sandwiches in the skillet and cook for about 3 to 4 minutes on one side, watching carefully to avoid burning while achieving a golden brown crust and melted cheese inside.
  6. Flip and Finish Cooking: Carefully flip the sandwiches and cook the other side for another 3 to 4 minutes until golden brown and crispy and the cheese is fully melted.
  7. Serve: Remove from pan, slice if desired, and serve immediately while hot and melty.

Notes

  • You can substitute medium cheddar with other melting cheeses like Gouda, mozzarella, or provolone.
  • Patting pickles dry prevents sogginess in the sandwich.
  • Maintain medium-low to medium heat to avoid burning and ensure melting cheese with a crispy exterior.
  • Prep and cook times may vary slightly depending on your kitchen appliances.
