Kielbasa Bites

  • 2 rings (13.9 ounces each) kielbasa

Mustard Sauce

  • ¼ cup (62 g) coarse ground Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons light brown sugar
  • 1 teaspoon Worcestershire sauce

Dipping Sauce

  • 2 tablespoons mayonnaise
  • Chopped parsley for garnish


Instructions

  1. Slice Kielbasa: Slice the kielbasa into ¼-inch slices without cutting all the way through by placing it between two chopsticks or skewers as guides, then slicing downward until you reach the chopsticks.
  2. Cut into Bites: Slice the partially sliced kielbasa crosswise into 1-inch bite-sized pieces, about 3 rings per piece, yielding about 40 bites total. Place the bites into a large bowl or onto a baking sheet.
  3. Prepare Mustard Sauce: In a small bowl, combine Dijon mustard, apple cider vinegar, brown sugar, and Worcestershire sauce. Divide this mixture into two equal portions in separate bowls.
  4. Make Dipping Sauce: To one bowl of mustard mixture, add mayonnaise and stir well to combine. Refrigerate the dipping sauce while you prepare the bites.
  5. Coat Kielbasa Bites: Pour or brush half of the plain mustard sauce over the kielbasa bites, making sure to get sauce between each cut section to flavor every bite. Reserve remaining sauce for after cooking.
  6. Arrange in Air Fryer: Place the kielbasa bites in a single layer in the air fryer basket. Depending on your air fryer size, work in batches as needed.
  7. Air Fry Kielbasa: Air fry at 400°F for 9 minutes, shaking the basket halfway through cooking, until the kielbasa bites are browned and crispy.
  8. Finish and Serve: Remove the bites from the air fryer and place them on a serving platter. Pour or brush the remaining mustard sauce over the hot kielbasa bites. Garnish with chopped parsley if desired and serve warm alongside the mayonnaise-based dipping sauce.

Notes

  • To bake instead of air frying, preheat oven to 425°F and line a baking sheet with parchment paper. Brush mustard sauce over the prepared kielbasa bites and bake for 20 minutes, or until browned.
  • Use coarse ground Dijon mustard for texture, but smooth Dijon can be a substitute for a different consistency.
  • Apple cider vinegar adds tanginess; white vinegar is a milder alternative.
