Description

Marshmallow Caramel Rice Krispies Puffs are a delightful treat featuring gooey marshmallows dipped in a smooth caramel mixture, then coated in crispy rice cereal. These bite-sized puffs combine chewy, sweet, and crunchy textures to create an irresistible snack or dessert that’s perfect for sharing or enjoying frozen for a nostalgic twist.

Ingredients

Scale

Caramel Mixture

  • 14 ounces individually wrapped caramel candy, unwrapped
  • 1 14-oz. can sweetened condensed milk
  • 4 tablespoons unsalted butter

Other Ingredients

  • 60 large marshmallows, fresh and soft
  • 8 cups crispy rice cereal such as Rice Krispies

Instructions

  1. Prepare Caramel Mixture: Set up a double boiler over medium-low heat and melt the caramel candies, sweetened condensed milk, and butter until a smooth caramel mixture forms. Alternatively, melt these ingredients in a microwave-safe bowl on a low setting, stirring regularly to prevent scorching.
  2. Prepare Work Station: Line a large rimmed baking pan with wax paper. Place a couple of cups of rice cereal into a medium-size, low, wide bowl and set aside.
  3. Dip Marshmallows in Caramel: Drop one marshmallow into the warm caramel mixture. Using a fork in each hand, turn the marshmallow to fully coat it with caramel. Lift the marshmallow out, tap the fork handle lightly on the side of the bowl to release excess caramel, then slide the fork along the rim to let other excess drip back into the bowl.
  4. Coat with Rice Cereal: Transfer the caramel-coated marshmallow to the bowl of rice cereal. Use a dedicated third fork to roll the marshmallow around until fully coated with the cereal.
  5. Set Puffs: Place the coated marshmallow puff onto the prepared baking pan. Repeat the dipping and coating process with the remaining marshmallows, adding more rice cereal to the bowl as needed. Working with three to four marshmallows at a time helps speed up the process.
  6. Store and Serve: Once the caramel is set, store the puffs in an airtight container with wax paper separating layers. For best freshness, refrigerate if consuming within a day or two, or freeze for longer storage. These puffs are also delicious eaten frozen or slightly thawed.

Notes

  • Using fresh and soft marshmallows ensures better coating and texture.
  • A double boiler helps gently melt the caramel to avoid scorching; microwaving can be used with caution.
  • Prepare enough wax paper-lined pans beforehand to avoid sticking and ease cleanup.
  • Storing with wax paper between layers prevents the puffs from sticking together.
  • Frozen puffs can be enjoyed for a different texture and nostalgic taste.
  • Working with multiple marshmallows at once speeds up the process efficiently.
  • These puffs are versatile and make great party snacks or fun treats for kids.
