- Heat the cider: In a saucepan, place the apple cider over medium-high heat. Add the orange and lemon slices, cinnamon sticks, cloves, and star anise. Bring the mixture up to a simmer.
- Simmer and steep: Once simmering, reduce the heat to low and let the cider gently steep for 30 minutes to allow the spices and citrus to fully infuse the cider.
- Add sweetness and strain: After steeping, stir in maple syrup to taste. Then remove and discard the orange and lemon slices, cinnamon sticks, cloves, and star anise.
