Description

A fun and colorful treat combining the iconic Lucky Charms cereal with gooey marshmallows and a hint of vanilla, perfect for a quick and easy snack or dessert. Optional white chocolate drizzle adds an extra touch of sweetness and elegance.

Ingredients

Scale

Main Ingredients

  • 6 tablespoons salted butter
  • 10 oz mini marshmallows
  • ½ teaspoon vanilla extract
  • 8 cups Lucky Charms cereal (296 g)

Optional Topping

  • 2 oz white chocolate bar, finely chopped

Instructions

  1. Prepare the Pan: Lightly grease a 9×13-inch (23×33 cm) pan with butter to prevent sticking and set it aside for later use.
  2. Melt Butter: Place 6 tablespoons of salted butter in a large pot and melt it carefully over low heat, ensuring it doesn’t burn.
  3. Add Marshmallows and Vanilla: Once the butter is melted, add 10 oz of mini marshmallows and ½ teaspoon of vanilla extract. Stir continuously until the marshmallows are completely melted and the mixture is smooth.
  4. Combine Cereal: Remove the pot from heat and add 8 cups (296 g) of Lucky Charms cereal. Gently stir the mixture until all the cereal pieces are evenly coated with the marshmallow mixture.
  5. Press into Pan: Immediately spread the coated cereal mixture evenly into the prepared pan. Press gently to form an even layer but avoid packing it too tightly to keep the treats light and chewy.
  6. Cool Completely: Allow the mixture to cool completely at room temperature to set properly.
  7. Add White Chocolate Drizzle (Optional): If desired, melt 2 oz of finely chopped white chocolate in the microwave using 20-second intervals, stirring well between each. Drizzle the melted white chocolate over the cooled treats for an added decorative and flavorful touch.

Notes

  • Use mini marshmallows for the best melting consistency and texture.
  • Pressing the mixture too hard into the pan can make the treats dense and tough; gentle pressing is key.
  • White chocolate drizzle is optional but adds a lovely flavor contrast and visual appeal.
  • Store leftover treats in an airtight container at room temperature for up to 3 days.
  • You can substitute butter with margarine or coconut oil if preferred.
