Ingredients
Scale
Meat and Vegetables
- 1/2 pound bacon, roughly chopped
- 1 1/2 pound ground beef
- 1/2 onion, chopped
- 2 garlic cloves, chopped
- 6 dill pickle chips, sliced
Seasonings
- 1 teaspoon seasoning salt
- 1 teaspoon garlic powder
- salt and pepper to taste
Mix-ins
- 2 oz cream cheese
- 2 tablespoons no sugar added ketchup
- 1 tablespoon Worcestershire sauce
Egg Mixture
- 2 eggs
- 1/2 cup heavy whipping cream
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
- Cook the Bacon: Cook the bacon according to the package instructions until crispy, then roughly chop and set aside for topping.
- Cook the Ground Beef: In a skillet over medium heat, add the ground beef and season evenly with seasoning salt, garlic powder, and salt and pepper. Add the chopped onion and garlic. Brown the meat completely while breaking it up and crumbling it as it cooks.
- Drain and Mix: Drain the cooked beef to remove excess fat, then return it to the skillet over medium-high heat. Add cream cheese, no sugar added ketchup, and Worcestershire sauce. Stir until combined and heated through.
- Assemble the Casserole: Remove the beef mixture from heat and spread it evenly in a greased 9×13 inch baking dish. Top evenly with chopped bacon and sliced pickles.
- Prepare Egg Mixture: In a medium bowl, whisk together the eggs, heavy whipping cream, and 1 cup of shredded cheddar cheese. Pour this mixture evenly over the beef, bacon, and pickles in the baking dish.
- Add Remaining Cheese: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole.
- Bake the Casserole: Place the casserole in the preheated oven and bake for 20 minutes or until the cheese is melted and bubbly.
- Cool and Serve: Allow the casserole to cool for about 5 minutes before serving to let it set slightly for easier slicing and serving.
Notes
- Use no sugar added ketchup to keep the casserole low carb.
- Adjust the amount of pickles to your preference for tanginess.
- Drain the beef well to prevent excess grease in the casserole.
- You can substitute heavy cream with half-and-half for a lighter option, but it might affect richness.
- For a spicier kick, add a dash of hot sauce to the beef mixture.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
