Description

A refreshing and floral Lavender Lemonade made with freshly squeezed lemons, dried culinary lavender, honey, and sugar, perfect for a delightful summer drink or brunch accompaniment.

Lavender Syrup

  • 2 cups water (454 grams)
  • ½ cup granulated sugar (100 grams)
  • ¼ cup honey (88 grams)
  • 3 tablespoons dried culinary lavender (8 grams)

Lemonade

  • 6 cups water (1,362 grams), divided
  • 2 cups freshly squeezed lemon juice (454 grams) from 10-12 lemons

Garnish (optional)

  • Blue or purple food coloring
  • Lemon slices


Instructions

  1. Make the lavender syrup: Over medium heat, combine 2 cups of water and the granulated sugar in a pot. Bring to a boil, stirring occasionally until the sugar completely dissolves. Remove from heat and stir in the honey and dried culinary lavender.
  2. Steep the lavender: Allow the mixture to steep for 2 hours, or less if a milder lavender flavor is preferred, to infuse the syrup.
  3. Strain the syrup: Strain the lavender syrup through a fine mesh sieve or cheesecloth, pressing down on the lavender to extract maximum flavor and liquid.
  4. Combine the lemonade: In a large pitcher, mix the freshly squeezed lemon juice, the strained lavender syrup, and the remaining 4 cups of water. Stir to combine thoroughly.
  5. Add color and serve: Optionally, add a couple drops of blue or purple food coloring to enhance the lemonade’s appearance. Serve the lavender lemonade over ice with lemon slices as garnish.

  • Steeping time can be adjusted depending on how strong you want the lavender flavor; less time yields a more subtle taste.
