Egg Wash

Instructions

  1. Prepare Puff Pastry: Thaw puff pastry according to package directions. Preheat oven to 375℉ (190℃). Line two sheet pans with parchment paper and set aside.
  2. Cut and Fill Pastry: Unfold one sheet of puff pastry and smooth seams. Cut into 6 equal rectangles and place them on a prepared sheet pan. Spoon 2 tablespoons of strawberry jam into the center of each rectangle, spreading evenly but leaving a ½-inch border on all sides.
  3. Apply Egg Wash to Edges: Whisk together the egg and water to make an egg wash. Using a small pastry brush, brush the egg wash around the edges of each jam-filled rectangle.
  4. Add Top Layer: Unfold the second sheet of puff pastry and smooth seams. Cut into 6 equal rectangles. Place each rectangle on top of the filled dough pieces one at a time, pressing gently to seal.
  5. Seal Edges: Use a fork to press around the seams of each pastry to ensure they are sealed securely, being careful not to press all the way through the dough.
  6. Brush Egg Wash on Top: Brush the tops of the pastries with the egg wash for a golden finish.
  7. Chill Pastries: Place the prepared pastries in the freezer until cold, about 30 minutes, to help them hold their shape while baking.
  8. Bake: Bake the pastries in the preheated oven for 25 minutes or until they are golden brown and cooked through.
  9. Prepare Icing: While the pastries bake, whisk together sifted powdered sugar, whole milk, and vanilla powder (if using) in a small bowl until smooth.
