Description

These Better Than Starbucks Egg Bites are a delicious, protein-packed breakfast option made with eggs, cheese, vegetables, and optional meats. Baked to perfection, they are easy to make ahead and perfect for a quick morning meal or snack.

Egg Mixture

  • 10 large eggs
  • ½ cup milk or cream
  • Salt to taste
  • Black pepper to taste

  • 1 cup shredded cheddar cheese
  • ½ cup chopped vegetables (bell peppers, tomatoes, onions)
  • ½ cup cooked crumbled bacon or sausage (optional)
  • ½ cup chopped turkey (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the egg bites.
  2. Prepare Muffin Tin: Generously spray a muffin tin with non-stick cooking spray to prevent sticking and make removal easy.
  3. Prep Ingredients: Chop up the vegetables you plan to use and cook and crumble the bacon or sausage if using. Chop the turkey if using as well.
  4. Mix Eggs: In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper until fully combined and slightly frothy, similar to scrambled eggs.
  5. Add Fillings to Muffin Cups: Place a handful of chopped vegetables, meat, and a bit of shredded cheese into each muffin cavity.
  6. Pour Egg Mixture: Carefully pour or spoon the egg mixture into each muffin cup, filling about 3/4 full.
  7. Stir Ingredients: Use a fork to gently stir each muffin cavity to mix the ingredients evenly within the egg mixture.
  8. Bake: Bake in the preheated oven for 18 minutes, or until the egg bites are set in the center and slightly golden on top.
  9. Cool and Remove: Let the egg bites cool for a few minutes, then use a butter knife or spatula to gently loosen and remove them from the tin.
