Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil, or favorite cooking oil
- 2-3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1-2 Tbsp sriracha
- 2-3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt, more or less to taste
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½-1 Tbsp sriracha, more to kick up the spice
- 1 tsp rice vinegar
- 2 tsp honey

Instructions
- Prep Bang Bang Sauce: Add all of the Bang Bang Sauce ingredients to a small bowl. Whisk well to combine. Adjust the flavor by adding more sriracha for spice or more honey or sweet chili sauce to balance it out. Chill until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey, breaking it into smaller pieces with a spatula. Cook until browned and the internal temperature reaches 165°F.
- Simmer with Seasonings: Reduce heat to medium-low. Add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir occasionally and simmer for 2-3 minutes to blend flavors.
- Thicken Mixture: Sprinkle corn starch over the turkey mixture and stir well to combine. This will thicken the sauce. Optionally, stir in 2 tablespoons of Bang Bang Sauce into the meat mixture for extra flavor.
- Assemble Rice Bowls: In bowls, layer cooked rice and your choice of fresh vegetables such as shredded carrots, cucumbers, edamame, pickled onions, avocado, shredded cabbage, and green onions. Spoon the ground turkey mixture on top and drizzle generously with Bang Bang Sauce. Garnish with sliced green onions and sesame seeds.
Notes
- Store leftovers separately in airtight containers. The turkey mixture keeps for 3-4 days refrigerated; the Bang Bang Sauce stays fresh up to 1 week.
- You can freeze the cooked turkey mixture mixed with Bang Bang Sauce for up to 3 months.
- If the ground turkey mixture seems dry, add additional soy sauce or chicken broth to moisten as it simmers, since the hot skillet can reduce liquids quickly.
- Feel free to customize rice bowl toppings with your favorite fresh or pickled vegetables.
