Ingredients
Scale
Chicken
- 4 chicken breasts
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 slices mozzarella
- 4 slices tomato
- 2 tablespoons basil, sliced
Balsamic Reduction
- 1/2 cup balsamic vinegar
- 2 tablespoons light brown sugar
Instructions
- Preheat Grill: Preheat your grill to medium-high heat to ensure it is hot and ready for cooking the chicken breasts evenly.
- Season Chicken: Season the chicken breasts evenly on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper to infuse the meat with flavor.
- Prepare the Grill: Spray the grill grates with non-stick cooking spray to prevent sticking and make flipping easier.
- Grill Chicken: Place the seasoned chicken breasts on the grill and cook until they are almost fully cooked through, approximately 12-15 minutes, turning occasionally for even cooking.
- Add Mozzarella: Top each chicken breast with a slice of mozzarella cheese. Close the grill lid and allow the cheese to melt, about 2-3 minutes.
- Remove and Top: Remove the chicken from the grill, then top each breast with a slice of fresh tomato and sprinkle with sliced basil for a fresh, aromatic finish.
- Prepare Balsamic Reduction: While grilling, add balsamic vinegar and light brown sugar to a small saucepan. Simmer over low heat for 10 minutes or until the mixture has reduced by half and thickened into a syrupy consistency. Keep warm.
- Serve: Drizzle the warm balsamic reduction over the assembled chicken and serve immediately for a delicious, elegant meal.
Notes
- For extra flavor, marinate the chicken for 30 minutes before grilling.
- If you don’t have a grill, you can use a grill pan or broiler to cook the chicken.
- Fresh basil can be substituted with dried basil if necessary, but fresh offers the best flavor.
- The balsamic reduction can be stored in the refrigerator for up to one week and reheated before serving.
- Use low-fat mozzarella for a lighter version of this dish.
