Description

Delightfully festive Grinch Cookies made with white cake mix, peppermint extract, and vibrant green food coloring, topped with charming red heart-shaped sprinkles. These soft, minty cookies are perfect for holiday celebrations and easy to prepare in under 30 minutes.

Ingredients

Scale

Cookie Dough

  • 15.25 ounces white cake mix
  • 8 tablespoons unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 teaspoons peppermint extract or mint extract
  • ½ teaspoon vanilla extract
  • green gel food coloring, enough for desired color

Coating

  • ¼ cup powdered sugar
  • 3 tablespoons cornstarch

Topping

  • red heart-shaped sprinkles or cinnamon hearts

Instructions

  1. Preheat oven: Preheat the oven to 375°F. Line a large baking sheet with parchment paper and set aside.
  2. Mix dough base: Using a hand-held mixer or stand mixer, combine white cake mix, softened butter, and eggs until well combined.
  3. Add flavor and color: Add peppermint (or mint) extract, vanilla extract, and enough green gel food coloring to achieve your desired shade of green. Mix on low speed until just combined. The batter will be thick and sticky.
  4. Prepare coating: In a small bowl, whisk together powdered sugar and cornstarch.
  5. Form cookies: Using a 1½ tablespoon cookie scoop, scoop dough balls and roll them in the powdered sugar mixture to coat completely. Place the coated dough balls about 1 inch apart on the prepared baking sheet.
  6. Bake cookies: Bake in the preheated oven for 12 minutes or until edges are set and the tops appear dry.
  7. Add sprinkles: Remove from oven and immediately press one red heart-shaped sprinkle onto the top of each cookie, gently pressing down to adhere.
  8. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to 4 days.
  • For freezing, cool cookies completely and place in an airtight freezer-safe bag for up to 2 months; thaw at room temperature or in the fridge overnight.
  • Use leftover Valentine’s Day heart sprinkles, or substitute with cinnamon hearts for a flavor twist.
  • Jumbo heart sprinkles create a bigger visual impact on the cookies.
