Description

  • 1 lb. fresh strawberries (454 g)

Glaze Mixture

  • ¼ cup sugar (50 g)
  • 1 tbsp lemon juice (15 ml)
  • 1 teaspoon cornstarch
  • 1 tsp vanilla extract (10 ml)


Instructions

  1. Prepare Strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Set aside half of the sliced berries in a mixing bowl for later use.
  2. Make Strawberry Purée: Place the remaining half of the strawberries into a blender or food processor and blend until fully puréed.
  3. Combine Ingredients and Cook: Pour the strawberry purée, sugar, lemon juice, and cornstarch into a saucepan. Mix well to combine all ingredients. Heat over medium-high heat until it reaches a gentle boil.
  4. Thicken the Glaze: Reduce heat to low-medium and simmer the mixture until it thickens. This should take a few minutes. To test, dip a spoon into the glaze and check if the back remains coated.
  5. Add Vanilla Extract: Remove the saucepan from heat and stir in the vanilla extract until well combined.
  6. Strain and Mix: Pour the hot strawberry glaze through a mesh strainer into the bowl containing the fresh reserved strawberries. Stir gently until all the fresh berries are coated with the warm glaze.
  7. Cool and Serve: Allow the strawberry glaze to cool to room temperature or chill before serving as a topping for various dishes.

Notes

  • Makes about 1.5 cups of strawberry glaze.
  • Store leftover glaze in an airtight container in the refrigerator for up to 3–4 days.
  • Reheat the glaze gently in 15-second intervals in the microwave to bring back to room temperature before use, or serve cold depending on the dish.
