Description

These festive Easter Rice Krispie Treats combine crispy cereal, gooey marshmallows, and colorful Easter-themed M&Ms and sprinkles for a fun and delicious holiday treat that’s easy to make and perfect for sharing.

Ingredients

Scale

Base Ingredients

  • ½ cup salted butter
  • 10 cups mini marshmallows, divided
  • 1 teaspoon vanilla extract

Cereals and Toppings

  • 5 cups Rice Krispies
  • 2 cups Rice Chex
  • 2 cups Frosted Cheerios
  • 1 cup Easter M&Ms
  • 2 teaspoons Easter sprinkles

Instructions

  1. Prepare baking dish: Premeasure all ingredients and line a 9×13-inch baking sheet with parchment paper. Coat the parchment with non-stick spray and set aside.
  2. Melt butter and marshmallows: In a large saucepan, melt the ½ cup salted butter and 8 cups of mini marshmallows together over medium-low heat, stirring frequently until smooth and fully melted.
  3. Add vanilla and remaining marshmallows: Remove the pan from heat. Stir in 1 teaspoon vanilla extract, then immediately add the remaining 2 cups of mini marshmallows, stirring until they begin to melt and the mixture is well combined.
  4. Mix in cereals: Add the 5 cups Rice Krispies, 2 cups Rice Chex, and 2 cups Frosted Cheerios to the marshmallow mixture. Stir gently but thoroughly until all cereal pieces are evenly coated.
  5. Fold in M&Ms and sprinkles: Quickly and carefully fold in 1 cup Easter M&Ms and 2 teaspoons Easter sprinkles, to avoid color bleeding from the candies.
  6. Transfer and shape: Pour the mixture into the prepared baking dish. Optionally top with extra M&Ms and sprinkles. Use parchment paper or greased hands to gently press the mixture into an even layer, taking care not to press too hard to keep treats soft.
  7. Set and cut: Allow the treats to set at room temperature for 30 minutes. Once firm, remove from the pan and cut into squares for serving.

Notes

  • Unsalted butter can be used; add ½ teaspoon salt to compensate.
  • Corn Chex can substitute for Rice Chex, but avoid wheat Chex to maintain texture.
  • Other varieties of Cheerios are fine to use based on preference.
  • Add M&M’s last and fold in gently to prevent the candy colors from bleeding.
  • Do not press the mixture too hard or the treats will become tough.
  • Store in an airtight container at room temperature for up to 2 weeks.
