Delicious homemade apple fritters made crispy and golden by frying, then coated with a sweet vanilla glaze. These fritters combine tender diced apples with a cinnamon-spiced batter, perfect as a comforting dessert or snack.

Fritters
- 1 1/2 cups all purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup soy milk
- 2 large apples (granny smith, honey crisp or other crisp variety), diced
- vegetable oil, for frying
Simple glaze
- 3 cups powdered sugar
- 1/3 cup soy milk
- 1/2 teaspoon pure vanilla extract
Instructions
- Combine dry ingredients. In a large bowl, add the flour, sugar, baking powder, salt, and cinnamon. Stir these dry ingredients together to evenly mix.
- Add wet ingredients and apples. Pour the applesauce and soy milk into the dry mixture and gently mix until just combined, being careful not to overmix. Fold in the diced apples carefully.
- Heat the oil. Pour 2 inches of vegetable oil into a large heavy skillet or pot and heat to 375 degrees Fahrenheit using a thermometer to monitor temperature.
- Fry the fritters. Using a 1/3 cup scoop, place batter into the hot oil, then flatten slightly with a spoon or by first flattening on a floured surface and transferring. Fry each fritter for 2-3 minutes on one side until golden brown, then flip and cook 1-2 minutes more until browned.
- Drain and cool. Remove fritters from oil and place them on a cooling rack set over parchment paper or a pan to catch oil drips and later the glaze drippings.
- Make the glaze. Whisk powdered sugar, soy milk, and vanilla extract in a small bowl until smooth and well combined.
- Glaze the fritters. Dunk each fritter into the glaze and return to the cooling rack to let the glaze harden and drip. Allow a few minutes for the glaze to set before serving.
Notes
- Use a high smoke point oil such as peanut, vegetable, or canola oil for frying to prevent smoking and impart a neutral flavor.
- For a gluten free version, a quality gluten free flour blend may work but has not been tested.
- Baking is possible but not recommended as the fritters will not become crispy. Bake at 350°F for about 30 minutes and spray with oil before baking.
- Apple fritters are best enjoyed fresh within a few hours of frying to maintain crispness; they soften over time.
