Instructions
- Prepare the base: Melt the butter over medium-high heat in a large skillet. Add the flour and cook for about a minute, stirring continuously until smooth and slightly bubbly to create a roux.
- Add garlic: Incorporate the minced garlic into the roux and cook for about 30 seconds or until fragrant, taking care not to burn it.
- Make the sauce: Stir in the heavy cream, lemon juice, Italian seasoning, and sun-dried tomatoes. Let the mixture simmer gently for 2 minutes, reducing heat if it bubbles too vigorously to avoid scorching.
- Cook the shrimp: Add the shrimp to the skillet and cook for approximately 5 minutes, or until the shrimp are cooked through and opaque and the sauce thickens slightly. Avoid overcooking the shrimp to keep them tender.
- Add greens and herbs: Stir in the baby spinach and fresh basil, cooking for another 2 minutes until the spinach wilts and everything is well combined.
- Season and serve: Taste and adjust seasoning with salt and pepper as needed. Serve immediately, optionally squeezing additional lemon juice on top and garnishing with grated fresh parmesan cheese if desired.
