Description

A creamy and flavorful Tuscan-inspired dish featuring butter beans simmered in a rich ‘Marry Me’ sauce made with garlic, sundried tomatoes, cream, kale, and parmesan. Perfect as a hearty side or a light main served with your favorite accompaniments.

Ingredients

Scale

Butter Beans

  • 2 (15 oz.) cans butter beans, drained and rinsed
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • ½ cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 tablespoons Tuscan Marry Me blend seasoning
  • 1 teaspoon sea salt
  • 1 cup organic heavy cream
  • ½ cup organic vegetable stock
  • 3 tablespoons white cooking wine
  • ½ lemon, freshly squeezed
  • 1 cup chopped kale, organic
  • ½ cup freshly-grated parmesan cheese plus more for garnish

Instructions

  1. Prepare the base: In a medium skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add seasonings and tomatoes: Stir in the Tuscan Marry Me blend seasoning and sea salt until well combined. Add the sundried tomatoes and tomato paste, stirring to combine thoroughly.
  3. Create the creamy sauce: Reduce the heat to medium-low. Slowly pour in the heavy cream, vegetable stock, freshly squeezed lemon juice, and white cooking wine. Stir continuously until ingredients are combined and the mixture begins to gently bubble for 1 to 2 minutes.
  4. Incorporate parmesan and thicken: Add the grated parmesan cheese, whisking until it fully melts and the sauce thickens, about 2 to 3 minutes.
  5. Add kale and beans: Stir in the chopped kale until incorporated, then add the drained butter beans. Let the mixture simmer gently for 5 to 6 minutes, allowing the beans to soften and slightly mash.
  6. Finish and serve: Remove the skillet from heat. Serve the Tuscan butter beans with your preferred side such as rice, mashed potatoes, vegetables, or garlic bread. Garnish with additional grated parmesan if desired.

Notes

  • You can substitute dry butter beans by soaking them overnight and cooking until tender before using.
  • Tuscan Marry Me blend can be purchased for authentic flavor or made at home with a mix of herbs like oregano, basil, and rosemary.
  • For a non-alcoholic version, omit the white wine or replace it with extra vegetable stock.
  • Try different white beans such as cannellini or great northern beans if butter beans are unavailable.
  • This dish pairs wonderfully with crusty bread to soak up the creamy sauce.
