Instructions

  1. Brown the Sausage: In a large skillet over medium heat, heat the olive oil. Add sliced smoked sausage and sauté until browned and slightly crisp. Remove the sausage from the pan and set aside.
  2. Sauté Vegetables: Add diced onion, green bell pepper, and red bell pepper to the skillet. Sprinkle with veggie seasoning blend. Cook for about 5 minutes until the vegetables are softened and slightly caramelized.
  3. Add Garlic: Stir in the minced garlic and cook for another 1 minute until fragrant, taking care not to burn the garlic.
  4. Create the Sauce: Pour in the chicken broth and heavy cream. Add the Boursin garlic and fine herbs cheese, stirring continuously until the cheese is fully melted and the sauce is smooth and creamy.
  5. Cook Tortellini: Add the frozen cheese tortellini to the skillet. Bring the mixture to a boil, then cover the pan, reduce heat to low, and simmer for 10 minutes until the tortellini is cooked al dente.
  6. Finish the Dish: Uncover the pan and stir in the grated Parmesan cheese and red pepper flakes if using. Return the browned sausage to the skillet. Continue to simmer uncovered until the sauce thickens slightly, about 2-3 minutes. Adjust seasoning with salt and pepper as needed.
