Instructions

  2. Remove Chicken and Sauté Aromatics: Remove the chicken from the pan, noting it might not be fully cooked. Add the diced garlic and onion to the pan and cook until browned, about 5 minutes.
  3. Add Stock and Red Peppers: Pour in the chicken stock and add the roasted red peppers. Allow the mixture to reduce by half, which will take about 5 minutes.
  4. Create Cream Sauce: Turn the heat off and slowly whisk in the heavy cream and shredded parmesan cheese, stirring vigorously as you add the cream to combine smoothly.
  5. Reheat and Combine: Bring the heat back to medium high, add Italian seasoning, pepperoncini peppers, and return the chicken strips to the pan.
  6. Simmer and Finish Cooking: Let the sauce reduce by half again while bringing the chicken to an internal temperature of 165°F. Add more chicken stock if the sauce becomes too thick during cooking.
  7. Serve: Remove from heat and serve the creamy pepperoncini chicken over vegetables, pasta, rice, or enjoy on its own.
