- 1 1/4 cups water
Instructions
- Preheat Oven: Preheat your oven to 400 °F to prepare for roasting the beef.
- Brown the Roast: Heat a skillet or Dutch oven over medium heat with olive oil. Brown the chuck roast on all sides in the hot oil to lock in flavors.
- Assemble in Roaster: Transfer the browned roast to a Dutch oven or lidded roaster. Arrange mushrooms and chopped onion around the roast evenly.
- Prepare Gravy: Whisk together the dry onion soup mix, cream of mushroom soups, and water until mostly smooth. Pour this mixture over the roast and vegetables.
- Start Cooking at High Temp: Cover with lid and place in the preheated oven. Cook for 20 minutes at 400 °F to begin tenderizing.
- Lower Oven Temperature: After 20 minutes, reduce oven temperature to 325 °F. Continue cooking for 4 to 5 hours until the beef is tender and pulls apart easily with a fork.
- Make Gravy: Remove the roast and plate it. Whisk together the mushrooms, onions, and pan drippings left in the Dutch oven to create a creamy gravy.
