Description

This Creamy Mushroom Beef Chuck Roast is a tender, flavorful roast cooked slowly with mushrooms, onions, and a rich creamy mushroom gravy. Perfect for a comforting dinner with melt-in-your-mouth beef and savory sauce.

Ingredients

Units Scale

Main Ingredients

  • 5 pounds chuck roast
  • 1 tablespoon olive oil
  • 454 grams package white or cremini mushrooms
  • 1 large yellow onion, chopped

Sauce Ingredients

  • 1 ounce package dry onion soup mix
  • 2 cans (10.75 ounces each) cream of mushroom soup
  • 1 1/4 cups water

Instructions

  1. Preheat Oven: Preheat your oven to 400 °F to prepare for roasting the beef.
  2. Brown the Roast: Heat a skillet or Dutch oven over medium heat with olive oil. Brown the chuck roast on all sides in the hot oil to lock in flavors.
  3. Assemble in Roaster: Transfer the browned roast to a Dutch oven or lidded roaster. Arrange mushrooms and chopped onion around the roast evenly.
  4. Prepare Gravy: Whisk together the dry onion soup mix, cream of mushroom soups, and water until mostly smooth. Pour this mixture over the roast and vegetables.
  5. Start Cooking at High Temp: Cover with lid and place in the preheated oven. Cook for 20 minutes at 400 °F to begin tenderizing.
  6. Lower Oven Temperature: After 20 minutes, reduce oven temperature to 325 °F. Continue cooking for 4 to 5 hours until the beef is tender and pulls apart easily with a fork.
  7. Make Gravy: Remove the roast and plate it. Whisk together the mushrooms, onions, and pan drippings left in the Dutch oven to create a creamy gravy.
  8. Serve: Spoon the creamy mushroom gravy over the sliced or pulled beef and serve warm for a hearty meal.

Notes

  • You can double the gravy ingredients if your pot allows; the gravy is delicious and can be enjoyed on its own or as an extra sauce.
  • Browning the roast before slow cooking or oven roasting adds depth of flavor but can be skipped in a pinch.
  • If using the slow cooker method, cook the roast on low for 8 to 10 hours until tender.
  • Make sure to check the roast towards the end of cooking; it should pull apart easily when fully cooked.
