  • 1.3 pounds ground beef

  • 1 yellow onion – grated

Creamy Dill Sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion – diced
  • 2 garlic cloves – minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • ½ cup low sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp chopped dill – more for serving


Instructions

  1. Prepare hamburger mixture: Grate one yellow onion into a large bowl. Add 1.3 pounds ground beef, 4 tablespoons breadcrumbs, 1 teaspoon salt, 1 teaspoon black pepper, 2 tablespoons heavy cream, and 1 egg. Mix gently with your hands until just combined.
  2. Shape patties: Divide beef mixture into 4 equal portions. Shape each portion into a ball, then press down with your palm or a spatula until they are about ¾ inch (2 cm) thick. Set aside.
  3. Chop aromatics: Finely dice the second yellow onion, mince 2 garlic cloves, and chop 2 tablespoons fresh dill. Keep dill aside for garnish as well.
  4. Cook hamburger steaks: Heat 1 tablespoon olive oil and 1 tablespoon unsalted butter in a large nonstick skillet over medium heat. Add the hamburger steaks and cook for 5 minutes on each side or until nicely browned. Transfer them to a clean plate.
  5. Create sauce base: In the same skillet, reduce heat to low and add the diced onion and minced garlic. Cook gently until fragrant, about 2 minutes. Stir in 1 teaspoon salt, 1 teaspoon black pepper, and 2 tablespoons all-purpose flour to incorporate well.
  6. Add liquids and simmer: Pour in ½ cup low sodium chicken broth, scraping the bottom of the skillet with a wooden spoon to loosen browned bits. Let simmer for 2 minutes.
  7. Finish sauce: Add 1 cup heavy cream and 2 tablespoons chopped dill. Bring mixture to a boil then reduce to a simmer for 1-2 minutes until the sauce thickens slightly.
  8. Reheat hamburger steaks: Return the cooked hamburger steaks to the skillet and simmer for 5-6 minutes until they are heated through and cooked fully in the center.
