Ingredients
Scale
Chicken and Sauce
- 1-2 Tablespoons vegetable oil
- Salt and pepper, to taste
- 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)
- 4 ounces (½ block) cream cheese, softened to room temperature
- 3 Tablespoons unsalted butter, softened to room temperature
- 10.5 ounce can cream of chicken soup (recommend low or no sodium if sensitive to salt)
- 3 cloves garlic, minced
- ¾ cup chicken broth (recommend low or no sodium if sensitive to salt)
- 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite mix)
Pasta and Garnishes
- 16 ounce box angel hair pasta
- Chopped fresh parsley (optional)
- Cracked pepper (optional)
- Grated Parmesan cheese (optional)
Instructions
- Preheat skillet and prepare chicken: Heat a cast iron skillet over medium-high heat. Add 1-2 Tablespoons vegetable oil and swirl to coat the bottom. Season 1.5 pounds boneless, skinless chicken breasts with salt and pepper on both sides.
- Sear chicken breasts: Once skillet is hot, add chicken breasts and sear each side for 2-3 minutes until golden brown. Remove from heat and set aside.
- Prepare creamy sauce: In a medium bowl, whisk together 4 ounces softened cream cheese and 3 Tablespoons softened unsalted butter until smooth.
- Combine remaining sauce ingredients: Add 10.5 ounce can cream of chicken soup, 3 minced garlic cloves, ¾ cup chicken broth, and 1 packet Italian salad dressing mix to the cream cheese mixture. Whisk until fully combined.
- Assemble in crock pot: Spray crock pot with non-stick cooking spray. Place seared chicken breasts in the bottom, then pour the sauce mixture over the top.
- Cook chicken: Cover and cook on low for 4 hours or until the internal temperature reaches 165 degrees Fahrenheit. Longer cooking softens chicken further but may cause it to fall apart.
- Cook pasta: Shortly before serving, prepare 16 ounces angel hair pasta according to package instructions to al dente. Drain well.
- Serve: Serve the chicken whole or shredded, spooned over the cooked pasta. Optional garnishes include chopped fresh parsley, cracked pepper, and grated Parmesan cheese.
Notes
- For lower sodium, use no salt cream of chicken soup and chicken broth, then season to taste.
- Cooking on high is possible but not recommended for tenderness; if necessary, cook 1.5-2 hours until chicken reaches 165 degrees Fahrenheit.
- Always rely on internal temperature to ensure the chicken is fully cooked rather than just cooking time, as crock pot temperatures vary.
- You can shred the chicken after cooking if you prefer it mixed into the sauce.
