Instructions

  1. Cook Pasta: Begin by cooking the penne pasta according to the package instructions until al dente, then drain and set aside.
  2. Season Chicken: In a large resealable plastic bag, combine 3 teaspoons Cajun seasoning, ¼ teaspoon salt, and ¼ teaspoon pepper. Add the chopped chicken pieces, seal the bag, and shake well until the chicken is evenly coated. Set aside to marinate briefly.
  3. Cook Chicken: Heat 2 tablespoons of butter in a large pan over medium heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 5-7 minutes, turning as needed. Remove the chicken from the pan and set aside on a plate.
  4. Sauté Vegetables: Add the remaining 1 tablespoon of butter to the same pan and melt. Add the diced onion and sliced bell peppers, cooking while stirring frequently until they begin to soften, approximately 4-5 minutes.
  5. Make Sauce: Pour in the heavy cream and add smoked paprika, dried basil, garlic powder, the remaining 1 teaspoon Cajun seasoning, and ¼ teaspoon each of salt and pepper. Bring the mixture to a boil, then reduce the heat to a simmer and cook until the sauce thickens slightly, about 5-7 minutes, stirring occasionally.
  6. Combine and Serve: Return the cooked chicken to the pan with the sauce. Add the fresh parmesan cheese and the cooked, drained pasta.
