Description

Cranberry Chicken Puffs are a delicious and easy-to-make appetizer featuring tender shredded chicken, sweet dried cranberries, creamy mozzarella cheese, and mayonnaise wrapped in flaky crescent roll dough and baked to golden perfection. These puffs offer a delightful combination of savory and sweet flavors, perfect for parties and gatherings.

Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken
  • 1 green onion thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup freshly grated mozzarella cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped walnuts or pecans (optional)

Dough

  • 16 ounces canned crescent roll dough (2 8-ounce cans)

Instructions

  1. Preheat oven: Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with a silicone mat, nonstick foil, or parchment paper to prevent sticking.
  2. Make filling: In a medium mixing bowl, combine the cooked shredded chicken, thinly sliced green onion, dried cranberries, freshly grated mozzarella cheese, and mayonnaise. Stir well until all ingredients are evenly mixed.
  3. Prepare dough rectangles: Open one can of crescent rolls and spread the dough out on a cutting board. Separate into 4 rectangles, each consisting of 2 triangles attached together, and press the seams in the middle to seal them. Repeat with the second can, resulting in 8 sealed rectangles of dough.
  4. Fill the dough: Scoop 1/4 cup of the chicken mixture into the center of each dough rectangle. Fold up the corners of each rectangle to cover the filling completely, pressing the edges to seal tightly and prevent any filling from leaking out.
  5. Arrange and bake: Place the stuffed puffs seam-side down on the prepared baking sheet, spacing them apart. Bake in the preheated oven for 12 minutes or until the tops are golden brown and the dough is cooked through.
  6. Cool and serve: Remove the baking sheet from the oven and let the puffs cool for 5 minutes before serving to allow the filling to set and avoid burning your mouth.

Notes

  • For appetizers, plan 1 puff per person; for dinner, 2 puffs per person are recommended.
  • You can add chopped walnuts or pecans for extra crunch and flavor, but this is optional.
  • If you prefer a lighter version, substitute mayonnaise with Greek yogurt or a low-fat mayo alternative.
  • Make sure to seal the dough corners well to prevent filling from leaking during baking.
