  • 1 sheet frozen puff pastry, thawed in the refrigerator
  • Flour, for dusting work surface
  • ¾ cup cranberry sauce
  • ½ cup finely chopped pecans

Instructions

  1. Prepare Brie: Cut off and discard the rind from the Brie cheese. Place the cheese on a parchment-lined plate and freeze for 20 minutes to make it easier to cut.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 375℉. Generously grease a 24-cup mini muffin pan with cooking spray and set it aside.
  3. Shape Puff Pastry: On a lightly floured surface, roll the thawed puff pastry into a 10×14-inch rectangle. Cut lengthwise into 4 even strips, then crosswise into 6 even squares to make 24 squares. Gently press each square into a muffin cup and prick the bottom with a fork.
  4. Cut Brie: Remove the chilled Brie from the freezer and cut into 24 pieces, about 3/4-inch each.
  5. Assemble Bites: Spoon 1 teaspoon of cranberry sauce into each muffin cup, press a piece of Brie into the sauce, then top with 1 teaspoon of chopped pecans. Sprinkle with sea salt if desired.
  6. Bake: Bake in the preheated oven for 20 minutes or until the pastry is golden brown. Allow the bites to cool slightly before removing them from the muffin pan.
  7. Serve: Serve warm or at room temperature, garnishing with rosemary sprigs for a fresh touch.
