Description

This Cowboy Butter Roasted Corn recipe features tender corn chunks coated in rich, flavorful cowboy butter, roasted to perfection and garnished with fresh parsley. A perfect side dish with a golden broiled finish that adds a smoky, caramelized touch.

Ingredients

Scale

Corn

  • 4 ears corn, husked and cut into 1 1/2-inch sections

Cowboy Butter

  • 1 recipe cowboy butter, melted

Garnish

  • parsley, chopped for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 425°F. Line a large baking sheet with aluminum foil, making sure there is enough extra foil on the ends to wrap the corn into a packet.
  2. Brush Corn with Butter: Place the corn sections onto the lined baking sheet. Generously brush each corn piece with melted cowboy butter, coating all sides thoroughly.
  3. Wrap Corn: Carefully wrap the buttered corn with the aluminum foil to create a sealed packet for roasting.
  4. Bake Corn: Place the foil packet on the baking sheet into the oven and bake for 30 minutes, allowing the corn to steam and absorb the flavors of the butter.
  5. Broil Corn: Open the foil packet carefully and switch your oven to broil. Place the corn under the broiler for 10 minutes, turning the pieces halfway through to achieve an evenly golden and slightly charred finish.
  6. Final Butter Brush and Garnish: Remove the corn from the oven, brush with any remaining warm cowboy butter for extra richness, and sprinkle chopped parsley on top for a fresh, vibrant garnish.
  7. Serve: Serve warm as a delicious side dish.

Notes

  • For air fryer cooking: Brush corn pieces with melted cowboy butter and place them in a single layer in the basket. Air fry at 400°F for 12 minutes, turning halfway through. Brush with additional butter and garnish with parsley.
  • You can also prepare this recipe by grilling the corn brushed with cowboy butter for a smoky flavor.
  • Microwave method is a quick alternative; microwave husked buttered corn sections until tender, then finish with a broil or grill for browning if desired.
  • To make cowboy butter, combine butter with garlic, herbs, and spices according to your preferred recipe.
