- 1 15oz. can pumpkin purée
- 1.5 cups chicken broth
- 1/2 tsp salt

- 1/4 cup heavy cream
- 1/4 cup grated Parmesan

Instructions
- Prepare Aromatics: Dice the onion and mince the garlic. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until the onion becomes soft and transparent, about 3 to 5 minutes.
- Add Chipotle Powder: Sprinkle the chipotle powder into the skillet and sauté for an additional minute to enhance the smoky flavor.
- Make Pumpkin Sauce: Stir in the pumpkin purée, chicken broth, salt, and freshly cracked pepper. Combine the ingredients until smooth.
- Simmer Sauce: Reduce heat to medium-low and simmer the sauce gently for 15 minutes, allowing the flavors to meld.
- Cook Pasta: While the sauce simmers, cook the pasta according to package instructions until al dente. Drain the pasta in a colander.
- Finish Sauce and Combine: Lower the heat to low, stir the heavy cream into the sauce, then add the cooked pasta. Stir to coat the pasta evenly and let it warm in the sauce for 2 to 3 minutes.
- Serve: Remove from heat, stir in the grated Parmesan cheese, top with additional cracked pepper if desired, and serve immediately.
