  • 1 tablespoon Italian seasoning
  • 1 ½ cup tomato sauce (passata)
  • 1 cup half and half (single cream)
  • ½ cup Parmesan, grated
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Chicken

  • 1 lb chicken breast, cut into 1-inch pieces


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta al dente according to package instructions. Reserve 1-2 cups of pasta water, then drain the pasta.
  2. Cook Chicken: In a large deep pan or Dutch oven, heat olive oil and melt butter. Add the cubed chicken breast and cook for 5-6 minutes until it turns slightly golden.
  3. Sauté Aromatics: Stir in the finely diced onion, chopped garlic, and red chili flakes. Cook for 2 minutes, stirring occasionally, until the onion softens.
  4. Add Seasoning and Sauce: Mix in Italian seasoning and tomato sauce (passata). Stir to combine, then add the half and half (single cream).
  5. Simmer Sauce: Allow the sauce to bubble gently for 2-3 minutes over low heat to blend the flavors.
  6. Combine Pasta and Sauce: Add the cooked pasta to the sauce and stir in grated Parmesan, allowing it to melt and coat the pasta.
  7. Finish and Serve: Add fresh chopped parsley, season with salt and freshly ground black pepper to taste, then serve immediately.
