  • 2 teaspoons monkfruit sweetener (optional, only add if you enjoy sweet waffles)
  • Pinch salt
  • 1 1/2 tablespoons sugar-free semi-sweet chocolate chips (divided)
  • 1-2 teaspoons water (as needed)


Instructions

  1. Mix Ingredients: Combine the creamy peanut butter, egg, cocoa powder, pinch of salt, monk fruit sweetener, and 1 tablespoon of semi-sweet chocolate chips in a bowl.
  2. Adjust Consistency: Add 1-2 teaspoons of water as needed to thin the mixture to a pourable batter consistency.
  3. Preheat Waffle Maker: Preheat a mini waffle maker according to the manufacturer’s directions to ensure even cooking.
  4. Cook First Waffle: Pour half of the batter into the waffle iron and top with half of the remaining chocolate chips. Close the lid and cook for 2-3 minutes until no steam emits from the machine.
  5. Remove and Repeat: Remove the cooked waffle carefully and repeat the process with the remaining batter and chocolate chips.

  • This recipe yields 2 waffles using a Dash mini waffle maker.
