Description

A delicious and tangy Brown Sugar Pineapple Chicken recipe featuring juicy grilled chicken tenders marinated in a sweet pineapple and brown sugar BBQ sauce, perfect for a quick and flavorful meal.

Ingredients

Scale

Marinade

  • 1 cup pineapple juice
  • 6 Tbsp brown sugar
  • 6 Tbsp BBQ sauce

Chicken

  • 1.5 to 2 lb boneless chicken tenders

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the pineapple juice, brown sugar, and BBQ sauce until the sugar is fully dissolved and the mixture is well combined.
  2. Marinate the Chicken: Reserve 1/4 cup of the marinade and set aside. Place the chicken tenders into a gallon ziplock bag and pour the remaining marinade over the chicken. Seal the bag tightly and refrigerate for 2 to 4 hours to allow flavors to infuse.
  3. Preheat the Grill: About 10 minutes before cooking, preheat your grill to medium-high heat to ensure even cooking.
  4. Grill the Chicken: Remove the chicken from the marinade and discard the used marinade. Grill the chicken tenders for about 8 to 10 minutes, turning occasionally until cooked through and the internal temperature reaches 165°F.
  5. Brush with Reserved Marinade: While grilling, brush the chicken on both sides with the reserved marinade to enhance flavor and create a sticky glaze before removing from the grill.
  6. Serve: Remove chicken from the grill, let it rest for a couple of minutes, then serve hot paired with your favorite sides.

Notes

  • Marinate the chicken longer, up to 4 hours, for more intense flavor and tenderness.
  • If you don’t have a grill, chicken tenders can be cooked on a stovetop grill pan or baked at 400°F for 15-20 minutes.
  • Reserve some marinade separately for brushing; do not reuse marinade that has been in contact with raw chicken to avoid contamination.
  • Use boneless, skinless chicken tenders for quick cooking and even marination.
  • For extra zest, add a splash of lime juice to the marinade before grilling.
