Main Ingredients
- 2 large avocados, sliced 1/2” thick wedges
- 1 lime
- 2 large eggs
- 1/4 teaspoon kosher salt
- 1/8 teaspoon coarse ground black pepper
- 1/2 cup panko bread crumbs
- 1/2 cup flour
- vegetable oil spray
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the avocado fries.
- Squeeze Lime: Squeeze the juice of one lime evenly over the avocado slices to add freshness and prevent browning.
- Prepare Egg Mixture: In a small bowl, whisk together 2 large eggs, 1/4 teaspoon kosher salt, and 1/8 teaspoon coarse ground black pepper until well combined.
- Dredge Avocado: Dip each avocado slice first into the 1/2 cup flour, then into the egg mixture, and finally coat it with 1/2 cup panko bread crumbs for a crispy crust.
- Arrange and Spray: Place the coated avocado slices on a baking sheet in a single layer. Spray them evenly with vegetable oil spray to help them crisp while baking.
- Bake First Side: Bake the avocado fries on the middle rack of the oven for 10 minutes until they turn golden brown.
- Flip and Bake Second Side: Carefully flip the fries, spray them again with vegetable oil spray, and bake for an additional 5 minutes to crisp the other side.
- Serve: Remove the fries from the oven and serve warm as a delicious snack or appetizer.
Notes
- Use ripe but firm avocados to ensure slices hold their shape during baking.
- Vegetable oil spray helps the fries crisp up without excess oil, but you can brush lightly with oil if preferred.
- For extra flavor, sprinkle some paprika or chili powder into the panko breadcrumbs before coating.
- Serve with your favorite dipping sauce such as ranch, chipotle mayo, or guacamole for added flavor.
- The lime juice not only adds flavor but also prevents the avocado slices from browning before baking.
