Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the avocado fries.
  2. Squeeze Lime: Squeeze the juice of one lime evenly over the avocado slices to add freshness and prevent browning.
  3. Prepare Egg Mixture: In a small bowl, whisk together 2 large eggs, 1/4 teaspoon kosher salt, and 1/8 teaspoon coarse ground black pepper until well combined.
  4. Dredge Avocado: Dip each avocado slice first into the 1/2 cup flour, then into the egg mixture, and finally coat it with 1/2 cup panko bread crumbs for a crispy crust.
