Description

Egg Rolls

  • 1 pound ground beef
  • 1 tablespoon hamburger seasoning
  • 1/2 small yellow onion, finely chopped (about 1/4 cup)
  • 4 large dill pickles, finely diced (about 1 cup)
  • 1 1/2 cups sharp cheddar cheese, shredded (169.5 g)
  • 10 egg roll wrappers
  • 1 recipe onion bacon jam, prepared

Dipping Sauce

  • 1/4 cup mayonnaise (58 g)
  • 2 teaspoons mustard
  • 2 teaspoons ketchup

Instructions

  1. Cook beef mixture: To a medium skillet over medium heat, add ground beef and hamburger seasoning. Cook, stirring occasionally, until no pink remains, about 10 minutes. Remove from heat and drain excess oil.
  2. Prepare wrappers: Lay out 10 egg roll wrappers on a clean surface.
  3. Assemble egg rolls: Working with one wrapper at a time, add 1 tablespoon bacon jam, ¼ cup hamburger mixture, 1 teaspoon diced onion, 1 ½ tablespoons diced pickle, and 2 tablespoons shredded cheddar cheese near the center.
  4. Roll egg rolls: Wet edges of the wrapper lightly with water. Fold the bottom corner over the filling and roll once. Fold in the right and left corners to the center and press to seal, adding more water if needed. Continue rolling until fully wrapped and press to seal edges.
  5. Preheat air fryer: Preheat the air fryer to 400°F.
  6. Cook egg rolls: Place egg rolls in the air fryer basket in a single layer (work in batches if needed). Spray tops with nonstick cooking spray. Air fry for 4 minutes, flip, spray again, and cook for another 4 minutes until golden brown and crispy.
  7. Make dipping sauce: While egg rolls cook, combine mayonnaise, mustard, and ketchup in a small bowl. Mix until smooth.
  8. Serve: Serve the egg rolls hot with the prepared dipping sauce.

Notes

  • For frying: Heat 2–3 inches of vegetable oil to 350°F in a deep pot. Fry egg rolls in batches for 2–3 minutes per side until golden brown. Drain on paper towels.
  • For baking: Preheat oven to 375°F, line a baking sheet with parchment paper. Place egg rolls on sheet, spray or brush with oil. Bake for 20 minutes, flipping halfway, until golden and crispy.
  • You can prepare the bacon jam in advance and store it refrigerated for up to one week.
  • Use sharp cheddar cheese for best flavor, but any melty cheese like Monterey Jack or Colby works well.
