Description

A delightful Apple and Blueberry Crumble combining fresh apples and juicy blueberries topped with a crunchy oat and brown sugar crumble. This easy-to-make dessert is baked to golden perfection and served warm, perfect with vanilla ice cream or whipped cream.

Ingredients

Scale

Apple Blueberry Filling

  • 3 cups blueberries
  • 2 medium apples peeled, cored and thinly sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Crumble Topping

  • 3/4 cup all purpose flour
  • 3/4 cup rolled oats
  • 3/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter melted

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F and lightly spray a 9-inch pie pan or 2-quart baking dish to prevent sticking.
  2. Prepare Filling: In a large bowl, gently combine blueberries, sliced apples, granulated sugar, lemon juice, flour, cinnamon, and salt until the fruit is evenly coated.
  3. Transfer Filling: Pour the combined fruit mixture into the prepared baking dish and set aside while preparing the topping.
  4. Make Crumble Topping: In a medium bowl, mix together flour, rolled oats, brown sugar, cinnamon, and salt. Add melted vegan butter and stir until the mixture becomes crumbly.
  5. Assemble Crumble: Sprinkle the crumble topping evenly over the fruit in the dish. Use your hands to press some topping into larger chunks to create delicious clusters when baked.
  6. Bake: Place the dish in the oven and bake for 40 minutes until the topping is golden brown, the apples are tender, and the sides are bubbling.
  7. Serve: Serve the crumble warm with vanilla ice cream or whipped cream for a comforting dessert experience. Enjoy!

Notes

  • Frozen blueberries can be used if fresh are unavailable.
  • You can substitute apples with other fruits such as strawberries, peaches, or pears.
  • For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats.
  • Coconut oil can be used as a replacement for vegan butter in the crumble topping.
