Instructions

- Mix Wet Ingredients: In the bowl of a standing mixer, beat together the softened butter, vegetable oil, granulated sugar, and powdered sugar until well combined and creamy.
- Add Eggs and Vanilla: Add the eggs and vanilla extract to the mixer and continue beating for 2 more minutes, scraping down the sides of the bowl as needed to ensure everything is evenly mixed.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and cream of tartar until evenly distributed.
- Incorporate Dry Ingredients: With the mixer running on low speed, gradually add the flour mixture a couple of spoonfuls at a time until the dough is evenly combined and forms a soft dough.
- Scoop Dough: Use a cookie dough scoop to drop spoonfuls of the dough evenly spaced onto the prepared baking sheets.
- Bake Cookies: Bake the cookies in the preheated oven for 8 minutes or until the bottom edges just start to turn lightly golden brown.
- Cool: Remove the cookies from the oven and transfer them to cooling racks to cool completely before serving or storing.
Notes
- Parchment paper is optional but helps with easier cleanup; cookies can also be baked directly on ungreased cookie sheets without issue.
- Chilling the dough is unnecessary and won’t affect the cookie spread or texture, but you may chill if preferred.
