Instructions

  1. Prepare the filling: In a large bowl, combine the shredded cooked meat, green chiles, chopped onion, ground cumin, chili powder, and garlic powder. Season with salt and black pepper to taste and mix well to integrate all flavors.
  2. Warm the tortillas: Wrap the flour tortillas in a clean towel and microwave them for 45 seconds to make them pliable and easier to roll without cracking.
  3. Assemble the chimichangas: Spoon about 1/2 cup of the meat mixture onto each tortilla, add 2 tablespoons of refried beans, and sprinkle with shredded cheddar cheese.
